Ginger Pancakes Recipe

Ingredients

 
1 1/2 cups barley flour
 
1 teaspoon salt
 
2 teaspoons baking powder
 
2 tablespoons honey
 
2 eggs
 
1/3 cup melted butter or margarine
 
1 1/2 cups milk
 
1 1/2inch cube fresh, peeled ginger root Honey or syrup

Directions

Stir together flour, salt, and baking powder in a large mixing bowl.
Combine honey, eggs, butter or margarine, milk, and ginger root in Bosch blender.
Whip until ginger is pureed.
Pour into flour mixture.
Mix well.
Lightly grease griddle, and heat.
Sprinkle a few drops of water on griddle to test temperature.
When bubbles dance, pour batter into 8inch circles.
Fry until bubbles appear on surface.
Turn once.
Serve with warm honey or syrup.
NOTE: One teaspoon ground ginger may be used instead of the fresh ginger root.
Whole wheat, oat, buckwheat, and rye flours, or a combination of these grains, may be used instead of the barley flour.
