Ginger Nuts Recipe
Ingredients
8 oz plain flour
Dessertsp. ground ginger
8 oz Demerara or Barbadoes sugar
4 oz butter
2 eggs
Small tsp. bicarbonate of soda
2 tabs. Milk
Directions
Dissolve soda in the milk and add the 2 well beaten eggs.
In another basin mix all dry ingredients together, and then rub in the butter.
Add milk, soda and eggs and blend well.
The mixture should be soft.
Now flour your hands and form the mixture into walnut sized balls, and place them well apart on a greased baking sheet.
Flatten the tops a little.
They should spread into a neat circle as they cook.
Store in an air tight tin when cold.
Some people put a split almond on top of each before the biscuits are baked, and very nice too.
