Ginger Nuts Recipe

| Lemon juice | 1 Tablespoon | |

Directions
Put the syrup into a saucepan with the butter, rind and juice of lemon.
Melt over a gentle heat.
When the syrup is melted, add the sugar to the flour mixture and mix everything together, forming a fairly stiff dough.
Roll this into small balls.
Space them on a baking sheet and flatten slightly with the back of a fork.
Bake at 375° for about 15 mins.
Watch them carefully.
When they are done they will be nicely browned, but still soft.
Slip a palette knife under them and lift onto a wire tray to cool.
They will be quite hard when cold.
Keep in an airtight tin.
