Ginger Carrots Recipe
Ingredients
1 pound baby carrots
1 quart boiling water
1/4 cup white wine vinegar
2 Tablespoons frozen apple juice concentrate
1 Tablespoon soy sauce
2 teaspoons minced raw gingerroot
Directions
Drop carrots into boiling water and cook 8 to 10 minutes until tender but still firm and not mushy.
Prepare the sauce by combining in a quart saucepan: 1/4 cup white wine vinegar 2 Tablespoons frozen apple juice concentrate 1 Tablespoon soy sauce 2 teaspoons minced raw gingerroot Bring the sauce to a boil, remove from heat.
Drain carrots and add to sauce.
Stir and let stand an hour or more.
Stir occasionally.
Just before serving, return pan to heat and warm up.
