Directions

In a large saucepan combine juice from beets, lemon juice and powdered pectin.
Stir over high heat until the mixture boils hard.
Stir in sugar.
Bring to a full rolling boil; boil hard for 1 minute, stirring constantly.
Remove from heat; skim off any foam.
Stir in ginger, and pour immediately into hot, sterilized jars.
Seal at once with melted paraffin.
Makes 5 cups.
