Ginger Poached Pears Recipe

Directions
In an 8" X 8" baking dish, combine the water, maple syrup or honey, lemon juice, lemon rind, and ginger.
Microwave on high for 3 minutes, or until boiling.
Using a vegetable peeler, remove a thin slice of skin from the upper end of each pear; keep the stems intact.
Stand the pears in the dish.
Cover with wax paper, allowing the stems to poke through.
Microwave on high for a total of 7 to 9 minutes, rotating the dish a quarter turn twice during this time, until the pears are tender.
Transfer the pears to a serving plate.
Microwave the cooking liquid on high for 10 minutes, or until reduced by half.
Pour over the pears and let cool.
Chill.
Serve garnished with the mint.
