 Vanilla1 1/2 Teaspoon
 Salt1/4 Teaspoon
 Ginger1/2 Teaspoon
 Mace3/4 Teaspoon
 Baking powder1/2 Teaspoon
 Soda1/4 Teaspoon
 Lemon -€“ 1, grated rind ( or orange -€“ 1, grated rind)
 Minute rolled oats - 1 1/2 cups
 Or bread flour1 1/4 Cup (16 tbs), sifted

Directions

GETTING READY
1) Preheat oven to 375 degrees.

MAKING
2) In a bowl, cream shortening by adding sugar.
3) Beat in egg.
4) Add flavoring.
5) In another bowl, sift together flour, spices, salt, baking powder and soda.
6) Add grated rind and combine with rolled oats.
7) Mix the dry mixture with the cream mixture.
8) Combine thoroughly.
9) Prepare small rounds from the mixture.
10) Use a well-greased cookie sheet to arrange the small rounds 1 inch apart.
11) With a fork, press on top.
12) Place inside oven to bake for about 10 minutes.
13) Cool the cookies on wire rack.

SERVING
14) Serve with any beverage or store in airtight container.
