Ginger Mint Dressing Recipe
Ingredients
| One 1-inch piece fresh ginger, peeled and cut into thin slices | ||
| Garlic | 1 Clove (5gm), peeled | |
| Mint leaves | 1/3 Cup (16 tbs), firmly packed | |
| 2 tablespoons fresh lime or lemon juice | ||
| Honey | 1 Tablespoon | |
| 3/4 cup nonfat plain yogurt | ||
| Salt | 1/2 Teaspoon | |
Directions
In the work bowl of a food processor fitted with the metal blade and the motor running, process the ginger and garlic until minced by dropping them through the feed tube.
Stop the motor, add the remaining ingredients, and process again until smooth.
Stop the motor and scrape down the sides of the work bowl once or twice.
Remove to a bowl and refrigerate until needed.The dressing stays fresh for 8 to 10 days in the refrigerator.
