Ginger Meatballs Recipe

| 2 cans consomme | ||
| 10 gingersnaps, crushed | ||
| Brown sugar | 4 Teaspoon | |
| Lemon juice | 1 1/2 Teaspoon | |
| Ground beef | 3 Pound | |
| Chopped onion to taste | ||
| Minced parsley to taste | ||
| Bread crumbs | 1/2 Cup (16 tbs) | |
| Eggs | 2 | |
| Potato | 1 Small, grated | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Combine consomme, gingersnaps, brown sugar and lemon juice in saucepan; simmer, stirring until smooth and blended.
Combine remaining ingredients; shape into small balls.
Drop into sauce; simmer, covered, for 30 minutes.
