Ginger Ice Cream Recipe

Ingredients
4 cups milk
6 Winch-thick slices fresh ginger, coarsely chopped
8 egg yolks
1 1/2 cups sugar
1 cup whipping cream
Directions
Combine milk and ginger in heavy nonaluminum 2- to 3-quart saucepan over low heat and cook 5 minutes, stirring occasionally.
Beat yolks with sugar in large bowl until mixture is thick and lemon colored and forms a ribbon when beaters are lifted.
Increase heat and bring milk to boil.
Gradually whisk hot milk into yolks.
Return to saucepan and cook over low heat, stirring constantly, until mixture leaves path on back of spoon when finger is drawn across; do not boil or custard mixture will curdle.
Strain custard through sieve lined with several layers of moistened cheesecloth set over medium bowl.
Place bowl into larger bowl filled with ice.
Cool custard completely, about 30 minutes, stirring occasionally. (For best results, refrigerate custard overnight to develop flavor.)
