Ginger Fruit Slaw Recipe
Ingredients
| Pineapple can | 1 8 Ounce, crushed | |
| 5 cups shredded red cabbage | ||
| 3 large oranges, peeled and sectioned | ||
| Carrots | 2 Large, shredded | |
| Dried apricots | 3/4 Cup (16 tbs), snipped | |
| Honey | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Ground ginger | 1/2 Teaspoon | |
Directions
Drain pineapple, reserving 1/4 cup of the juice; set aside.
In a large bowl combine cabbage, orange sections, shredded carrots, snipped apricots, and crushed pineapple; cover and chill.
In a screw-top jar combine reserved pineapple juice, honey, lemon juice, and ginger.
Cover and chill.
Just before serving, shake dressing; pour over cabbage mixture.
Toss to mix dressing with cabbage mixture
