Ginger Cupcakes Recipe

Ingredients
1 8 1/4-ounce can crushed pineapple
3 tablespoons butter
1/2 cup packed brown sugar
1 14-ounce package gingerbread mix
Directions
Preheat oven to 400°.
Drain pineapple, reserving syrup.
In small saucepan melt butter.
Remove from heat; stir in brown sugar and the drained pineapple.
Spoon into 18 muffin cups.
Prepare gingerbread mix according to package directions except use pineapple syrup plus enough water to equal liquid called for in package directions.
Divide batter between muffin cups, filling % full (do not overfill pans).
Bake in 400° oven 15 minutes.
Let cool 5 minutes.
Loosen and invert onto wire rack.
Drain pineapple, reserving syrup.
