Ginger Crinkles Recipe
Ingredients
| Margarine | 1/4 Cup (16 tbs), softened | |
| Sugar | 3/4 Cup (16 tbs) | |
| Molasses | 1/4 Cup (16 tbs) | |
| 1 tablespoon grated lemon rind | ||
| Egg | 1 | |
| All purpose flour | 2 Cup (16 tbs) | |
| Baking soda | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Ground ginger | 1 Tablespoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Vegetable cooking spray | ||
Directions
Beat margarine at medium speed of an electric mixer until creamy; gradually add sugar, beating well.
Add molasses, lemon rind, and egg; beat well.
Combine flour and next 4 ingredients; stir well.
Gradually add flour mixture to margarine mixture, stirring well.
Divide dough in half.
Shape each half into a ball, and wrap in wax paper; chill 1 hour.
Shape each half into 18 (1-inch) balls.
Place 2 inches apart on cookie sheets coated with cooking spray.
Bake at 350° for 12 minutes or until golden.
Remove from cookie sheets, and let cool completely on wire racks.
