Ginger Chicken Recipe
Ingredients
675g chicken breasts, cut into finger-sized pieces
1 tspn sugar
Salt and pepper
4 tblspn sesame oil
10cm piece fresh root ginger, peeled and finely sliced
75-100ml water
100g button mushrooms
2 tblspn brandy
2 tspn cornflour, blended with
3 tblspn water
1 tspn light soy sauce
Directions
Sprinkle the chicken with the sugar and leave to stand for 20-30 minutes.
Season with salt and pepper.
Heat the oil and fry the ginger for 1 minute.
Add the chicken pieces and cook for 3 minutes.
Stir in the water and mushrooms.
Cover and cook for a further 5 minutes, or until the chicken is tender.
Add the brandy, cornflour mixture and soy sauce.
Bring to the boil, stirring, until thickened.
Season with salt and pepper.

Stir in the water and mushrooms.
Cover and cook for a further 5 minutes, or until the chicken is tender.
