Directions

Cook chicken or turkey giblets until tender, drain and cut in small pieces, saving liquor.
Saute sliced mushroom caps from 1 lb. of mushrooms until golden brown, in the fat left in the roasting pan, as in gravy.
Add an equal amount of flour, blend, and add liquid, as in gravy, using giblet liquor as a part of it.
Add the chopped giblets If desired, cook mushroom stems in 2 cups, water 20 min.
Strain, and use liquor in gravy.
