Giant Oatmeal Spice Cookies Recipe
Ingredients
1 1/2 cups sifted flour
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 pound unsalted butter
2 teaspoons ground allspice
1 teaspoon vanilla extract
1 1/2 teaspoons ground cloves
1 cup granulated sugar
1 1/2 teaspoons ground ginger
1 cup light brown sugar, firmly packed
1/2 teaspoon finely ground black pepper
2 eggs
Pinch salt
3 cups quick cooking rolled oats
Directions
Sift the flour with the spices, salt and baking soda and set aside.
Cream the butter; add vanilla, white and brown sugars and beat well, until creamy.
Add eggs and beat.
On low speed of electric mixer beat in sifted dry ingredients.
Stir oats in with spoon.
Line two cookie sheets with aluminum foil, shiny side down.
Place 10 cookies on each sheet, using 1/4 cup of batter for each.
Let stand 2 hours before baking.
Bake at 375 degrees for 12 to 15 minutes on racks that have been placed on second and third rungs in oven.
Reverse sheets once during baking.
The cookies should be quite soft when they are done.
Cool on racks before removing from sheets.
NOTE TO COOK: Carry to party in storage container.
