German Potato Salad Recipe
German Potato Salad is an amazingly delicious mouth watering recipe. Serve it at your dinner party; I bet you will have a huge fan following for this one!
Ingredients
8 cups sliced potatoes (about 3 lbs.)
2 tsp. salt
8 slices bacon cut into 1-inch pieces
1 cup chopped onion
1 small garlic clove, crushed
3/4 cup cider vinegar
2 Tb. sugar
1/2 tsp. pepper
Directions
Pare about 3 lbs. potatoes and cut into 1/4-inch-thick slices, to make 8 cups.
Place in a saucepan, cover with cold water, add 2 teaspoons salt and bring to a boil.
Cover and cook 10 to 15 minutes, or until potato slices are just tender.
Drain well.
Cook 8 slices bacon, cut into 1-inch pieces, until crisp.
Remove from skillet and set aside.
Pour off all but about 1/4 cup bacon fat and add to skillet 1 cup chopped onion and 1 small garlic clove, crushed.
Cook, stirring, 2 or 3 minutes.
Add 3/4 cup cider vinegar, 2 tablespoons sugar and 1/2 teaspoon pepper, stirring to blend.
Pour over hot, cooked potato slices, toss gently and serve.
