German Nut Cookies Recipe

2 egg whites
 
1 1/2 cups sifted icing sugar 375 mL
 
1 tsp grated lemon rind 5 mL
 
1/2 tsp cinnamon 2 mL
 
2 1/2 cups mixed ground nuts 625 Ml

Directions

Beat egg whites until foamy.
Add sugar gradually and continue beating until stiff.
Stir in lemon rind and cinnamon.
Set aside about 1/3 of this mixture.
Stir ground nuts into remaining egg white mixture.
Pat nut dough out 1/3 inch (1 centimeter) thick, on pastry board sprinkled with icing sugar.
Smooth top with a rolling pin without pressing.
Cut in small shapes with a cooky cutter dipped in icing sugar.
Place on a well greased cooky sheet and spread tops with reserved egg white mixture.
Bake at 350F (180C)for 12 to 15 minutes.
