Ingredients
1 c. sugar
5 eggs, separated
1 whole egg
1 c. pistachios, ground
1 tsp. vanilla
1/2 tsp. cinnamon
Pinch of salt
1/3 c. butter
2 c. confectioners' sugar

Directions
Beat sugar, egg yolks and whole egg; add pistachios, vanilla, cinnamon and salt, mixing well.
Beat egg whites until stiff peaks form; fold into batter.
Pour into greased waxed paper-lined 10-inch pan.
Bake at 350 degrees for 35 minutes.
Cool slightly; remove from pan to cake plate.
Cream butter and confectioners' sugar together; add enough sherry to make smooth icing.
Fill and frost cake.
