German Hot Potato Salad Recipe
Ingredients
6 medium potatoes (2 lbs.)
6 slices bacon, cut into 1/2"pieces
1/2 cup chopped onion
2 t sugar
2 t salt
1 t all-purpose flour
1/8 t pepper
1/2 cup water
3 t red wine vinegar
Directions
Cook unpeeled potatoes 20-30 minutes until fork-tender.
Drain, peel and dice potatoes.
Meanwhile, in 10" skillet over medium heat, cook bacon until crisp; remove bacon to paper towels to drain.
Spoon off all but 2 T.
bacon fat from skillet, add onion; cook until tender about 5 minutes.
Stir in sugar, salt, flour and pepper until blended.
Gradually stir in water and vinegar.
Cook, stirring constantly, until mixture is slightly thickened and boiling.
Gently stir in potatoes and bacon; heat through and serve.
