German Style Potato Salad Recipe
|Potatoes/1 1/4 pounds tiny new potatoes||1 1⁄4 Pound (4 Medium Ones)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|All purpose flour||1 Tablespoon|
|Celery seed||1⁄4 Teaspoon|
|Cooked bacon slices||1 Tablespoon|
|Snipped parsley||1 Tablespoon|

In a covered saucepan cook the potatoes in boiling water for 10 to 15 minutes or till just tender.
Set the potatoes aside while preparing the dressing.
For the dressing, in the same saucepan cook the chopped onion, covered, in the 1/4 cup water for 3 to 4 minutes or till the onion is tender.
Do not drain.
Meanwhile, in a small mixing bowl gradually stir the 1/2 cup cold water into the flour till smooth.
Stir mixture into the undrained onion in the saucepan.
Stir in the sugar, celery seed, salt and pepper.
Cook and stir till thickened and bubbly.
Stir in the vinegar.
Carefully stir in the cooked potatoes and bacon pieces.
Cook for 2 to 3 minutes more or till heated through, stirring gently.
Transfer to a serving bowl.
Sprinkle with parsley.
