 Small fresh spinach leaves - 1 pound
 Mayonnaise1/2 Cup (16 tbs)
 Dairy sour cream1/2 Cup (16 tbs)
 Anchovies6
 Green-onion tops - 1 1/2 tablespoons, chopped
 Parsley1 1/2 Tablespoon, minced
 Vinegar1 1/2 Tablespoon
 Lemon juice1 1/2 Tablespoon
 Garlic1/2 Clove (5gm), minced
 Cheddar-cheese cubes or garlic croutons

Directions

MAKING
1. Prepare the spinach by washing and drying them.
2. In a bowl mix remaining ingredients except cheese, add to spinach and mix lightly.

SERVING
3. Garnish with cheese and serve.
