Crispy German Potato Salad Recipe

Ingredients
4 medium potatoes
6 slices bacon
1/2 cup finely diced celery
1/2 cup finely diced onion
1/2 teaspoon salt
1/4 teaspoon hickory salt
1/2 cup white vinegar
2 1/2 tablespoons sugar
Directions
1. Cook potatoes following directions in Fresh Vegetable Cooking Chart. Cool slightly, peel and thinly slice. Set aside.
2. Arrange bacon on a microwave-oven-safe roast rack set in a glass baking dish. Cover with a paper towel. Cook in microwave oven 4 to 6 minutes at High, or until crisp. Reserve 2 tablespoons drippings. Crumble bacon and set aside.
3. Alternate layers of potatoes, celery and onion in a 2-quart glass casserole, sprinkling each layer with salt or hickory salt.
4. Mix vinegar and sugar. Pour over potatoes; mix carefully. Sprinkle crumbled bacon over top and drizzle with reserved bacon drippings; mix carefully.
5. Heat uncovered in microwave oven to serving temperature (about 5 minutes at High); mix carefully once.
