German Potato Salad Recipe

Ingredients
12 slices bacon, diced and fried until crisp (reserve 6 tablespoons drippings)
3 medium-sized onions, chopped
1 cup less
2 tablespoons cider vinegar
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 to 3 pounds potatoes, cooked, peeled, and cut in 1/4-inch slices
Directions
1. Heat bacon drippings in a skillet. Add onion and cook until tender, stirring occasionally. Stir in vinegar, sugar, salt, and pepper; heat to boiling. Mix in bacon.
2. Pour over potato slices in a serving dish and toss lightly to coat evenly. Garnish with snipped parsley and paprika.

As a German, let me suggest to leave out the bacon. Way too much in grease and nitrites! Although some German recipes for potato salad call for some diced bacon as a garnish, this does not mean fried American bacon strips, as they do not exist in Germany. German bacon is more like Canadian bacon or smoked ham. Also, cut down on the sugar, 1/4 teaspoon is plenty. Finally, one of the ingredients is missing (3rd item, entitled "less").
