Ingredients

 Lean bacon- 8 slices, chopped into 1 inch pieces
 Small Red potatoes- 8 cups, sliced
 Mayonnaise6 Tablespoon
 Packed brown sugar1/4 Cup (16 tbs)
 Red onion- 2 tablespoons, grated (juice retained
 Spicy brown mustard- 2 teaspoons
 Coarsely ground black pepper- ½ teaspoon
 Cider vinegar6 Tablespoon
 Green onion- ¼ cup, sliced

Directions

MAKING
1. In a medium sized bowl, combine red onion, mustard, brown sugar, pepper and vinegar. Mix well.
2. Add potatoes and half quantity bacon. Mix well and transfer on to serving bowl.

SERVING
3. Garnish with green onions, bacon and serve immediately.
