Ingredients

 Medium-sized potatoes - 8
 French dressing1/3 Cup (16 tbs)
 Spring onions2
 Capers2 Tablespoon, chopped
 Parsley2 Tablespoon, chopped
 Caraway seeds - 1 tablespoon, lightly toasted
 Salt1 1/2 Teaspoon
 Coarsley ground black pepper - 1 teaspoon
 Mustard powder1/2 Teaspoon
 Mayonnaise3/4 Cup (16 tbs)

Directions

GETTING READY
1) Boil potatoes with skin and peel while still hot enough to handle.
2) Cut into cubes while hot and sprinkle dressing over them.
3) Toss till potatoes are well coated with dressing.
4) Set aside till cold.

MAKING
5) Mix in spring onions, capers, parsley, caraway seeds, salt, pepper and mustard.
6) Add mayonnaise and mix till well blended.
7) Place in the refrigerator till chilled.
8) Gently mix in hard-boiled eggs (if used) just before serving the salad.

SERVING
9) Serve the chilled salad as side dish.
