Directions

MAKING
1. In a sacepan, cook the potatoes with the peel on; allow to cool when done and peel
2. Dice the bacon and cook it in a skillet over a low flame till crisp; drain, retain the fat and dry the bacon on paper towels
3. In a bowl, mix flour with quarter cup of the bacon fat, add sugar and salt and cook over a low flame stirring
4. Add vinegar gradually along with two and a quarter cups of water and cook till the mixture thicken; add onion
5. Slice the potatoes and mix with the sauce and half of the crisp bacon; sprinkle the rest of the bacon on top

SERVING
6. Sprinkle minced parsley on top and serve
