Simple German Potato Salad Recipe
Ingredients
| Potatoes | 1 Pound | |
| Bacon Slices | 6 , diced | |
| 1 onion (medium) diced | ||
| Vinegar | 1/2 Cup (16 tbs) | |
| 1/2 cup stock or bouillon | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Egg yolk | 1 , beaten | |
Directions
GETTING READY
1) Scrub, rinse and boil potatoes in jackets and let cool.
2) Peel the potatoes and cut in 1/4 inch slices.
MAKING
3) In a hot pan, cook bacon to crisp.
4) Add onion to sauté until transparent.
5) Pour in vinegar, stock or bouillon and seasonings.
6) Stir in and bring it to a boil.
7) Stir in egg and remove from heat.
8) Pour the sauce over potatoes.
SERVING
9) Serve the salad by seasoning to taste.

As a German, let me suggest to leave out the egg and the bacon. Although some German recipes for potato salad call for some diced bacon as a garnish, this does not mean fried American bacon strips, as they do not exist in Germany. German bacon is more like Canadian bacon or smoked ham.
