Red Wine Vinegar German Potato Salad Recipe
Ingredients
| 4 to 6 medium-sized potatoes, peeled and sliced | ||
| Celery | 1/3 Cup (16 tbs), chopped | |
| Parsley | 1 Tablespoon, finely chopped | |
| Water | 3 Tablespoon | |
| 5 slices bacon, cut in 1/2-inch pieces | ||
| All purpose flour | 1 1/2 Tablespoon | |
| Sugar | 2 Tablespoon | |
| Salt | 1 Teaspoon | |
| Celery seed | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Water | 3/4 Cup (16 tbs) | |
| Red wine vinegar | 1/3 Cup (16 tbs) | |
Directions
Combine potatoes, celery, parsley, and water in a 2 1/2-quart casserole.
Cover with plastic wrap.
Microwave at HIGH 10 to 12 minutes.
Stir after 5 minutes.
Let stand, covered, while cooking bacon.
Place bacon in a 1 1/2 quart casserole.
Cover with paper towel.
Microwave at HIGH 4 minutes.
Stir after 2 minutes to separate the pieces.
Remove bacon with a slotted spoon.
Place on paper towel to drain.
Stir flour, sugar, salt, celery seed, and pepper into bacon drippings until smooth.
Microwave at HIGH 2 minutes or until hot.
Stir well after 1 minute.
Add water and vinegar.
Microwave at HIGH 3 to 4 minutes or until mixture becomes thick.
Stir well after 1 minute.
When thick, stir until smooth and pour over the hot cooked potatoes.
Add crumbled bacon and toss gently to combine.
Cover and let stand 2 to 3 minutes or until ready to serve.
