German Hot Potato Salad Recipe

Yumm!! I can't still believe how good this German Hot Potato Salad were. Every time my husband brings home potatoes, the only recipe which hits my mind is the German Hot Potato Salad. Once you try this recipe, I am sure you will agree with me! Best when served hot (as the name suggests)

Ingredients

 
6 medium-sized potatoes
 
Water
 
6 slices bacon, cut into 1/2 inch pieces
 
1/2 cup chopped onion
 
2 teaspoons sugar
 
2 teaspoons salt
 
1 teaspoon all-purpose flour
 
1/8 teaspoon pepper
 
3 tablespoons red-wine vinegar
 
Minced parsley for garnish

Directions

1. In 4-quart saucepan over high heat, heat unpeeled potatoes and enough water to cover to boiling. Reduce heat to low; cover and simmer 25 to 30 minutes, until potatoes are fork-tender. Drain. Cool potatoes slightly. Peel and dice potatoes.
2. Meanwhile, in 10-inch skillet over medium-low heat, cook bacon until brown; remove bacon to paper towels to drain.
3. Prepare dressing: Spoon off all but 2 tablespoons bacon fat from skillet; add onion and cook until tender. Stir in sugar, salt, flour, and pepper; cook 1 minute. Gradually stir in vinegar and 1/2 cup water. Cook, stirring constantly, until mixture thickens slightly and boils.
4. Gently stir in potatoes and bacon until well coated with dressing; heat through. Garnish with minced parsley.
