Geranium Leaf Water Ice Recipe
Ingredients

| 1/2 cup fine sugar thinly peeled rind and juice of | ||

| 3 sweet-scented geranium leaves | ||
| 1 egg white tiny geranium leaves to decorate | ||
Directions
1. Place the water, sugar, lemon rind and geranium leaves in a pan and heat gently, stirring until the sugar has dissolved. Bring to the boil, then simmer for 5 minutes. Add the lemon juice, cover and leave to cool.
2. Strain into a rigid freezerproof container, cover, seal and freeze for about 3 hours, until half-frozen. Turn into a bowl.
3. Whisk the egg white until stiff, then whisk into the half-frozen ice. Return to the container, cover, seal and freeze for about 2 hours, until firm.
