Ingredients

 
Boneless chicken- 1 lb (chicken breast diced)
 
Egg-1
 
Flour-1 cup
 
Cooking oil – 3 cups
 
Spring onions -2
 
Garlic – 3 cloves (minced)
 
Ginger – cut into juliennes
 
For the sauce:
 
ΒΌ cup chicken stock
 
2 tbsp sugar
 
2 tbsp white vinegar
 
1 tbsp hoisin sauce
 
1 tbsp sesame oil
 
1 tsp cornstarch
 
1 tbsp dark soy (optional)

Directions

Add all ingredients for the sauce in a bowl . Mix till sugar dissolves. Keep aside.

Take a bowl . Add the chicken . Break the egg into it and mix. Roll the chicken in flour. Take a wok and add to it 3 cups of cooking oil. Set heat at med-high. When the oil is at 375-400 degrees, deep fry the chicken pieces till it turns golden brown. Take out and drain the excess oil.

Take another wok. Keep on high heat. Add 2 tbsp of cooking oil. Add to this the chopped spring onions, ginger and garlic. Stir for a minute. Add the sauce and stir till bubbles appear (starts to boil). Add the deep fried chicken pieces. Mix till the chicken is well-coated with the sauce. Add sesame oil if desired (gives an added flavor). Serve this delicious chicken with steamed rice.
