Gelato Recipe

Ingredients
2 cups (500 ml) water
2 cups sugar
pinch of salt
1 cup (250 ml) lemon juice
grated rind of one lemon
2 egg whites
Directions
Mix together water, sugar and salt in a saucepan.
Bring to a boil and cook over a medium heat for five minutes.
Strain lemon juice and add with the grated rind to the sugar mix ture.
Cool.
Beat egg whites until stiff and fold into the cooled lemon mixture.
Pour into freezing tray, cover with plastic wrap and freeze until firm.
