Gelatin Salad Recipe

| Lemon | 1 , juiced | |
| Pimento cheese | 3⁄4 Cup (12 tbs), grated in long curls | |
| Whipped cream | 1 Cup (16 tbs) |

Directions
Heat pineapple and sugar to boiling point; add lemon juice.
Remove from heat.
Add gelatin; stir until dissolved.
Cool until partially set; whip until light and fluffy.
Fold in cheese and whipped cream.
Let set until firm.
