Ingredients

 
2 Cups spicy V8 Juice
 
1 Hot House cucumber peeled and diced
 
1 Diced tomato
 
1 Diced green onion
 
1 tsp cumin
 
.5 Cup yogurt (more if you like)
 
Pinch cayenne
 
Few slices of lime for garnish
 
Finishing salt

Directions

Dump it all in a bowl - mix - enjoy...

Gazpacho is a Spanish cold soup enjoyed during hot summers. It’s appetizing, delicious and most importantly easy to make. Chef Tina shows us her way of making Gazpacho, which is slightly different compared to the classic version. She keeps it little spicy by using a spicy juice and adds freshly diced cucumber and tomatoes for a fresh feel.

too bad you aren't closer we have toooo many chiles serranos, habs many others (I grow 60+ variities), plus maybe 80 varities of heirloom tomatoes this year. Dang we picked a dozen cucmbers tonight. So much stuff from the garden. Want some? Perfect for gazpacho etc.
