Gazpacho Recipe
Ingredients
1 small onion, chopped
1 cup peeled and diced fresh tomatoes
1/2 cup diced green pepper
1/2 cup diced celery
1/2 cup diced cucumber
1/2 clove garlic
3 cups tomato juice
1/3 cup French Dressing
1 tablespoon lemon juice, Salt and cayenne to taste
Directions
Place all vegetables and garlic in blender with 1 cup tomato juice.
Blend until mixture is smooth.
Add French Dressing, lemon juice, salt and cayenne with remaining tomato juice.
Chill thoroughly.
Serve very cold with small bowls of cubed tomato, celery, green pepper and cucumber, to be sprinkled over soup.
