Gazpacho Skillet Recipe

Ingredients
1 lb. ground beef
1 cup Brand Rice
1 medium onion, sliced
1 clove garlic, minced
2-1/2 cups tomato juice
1 /4 cup red wine vinegar
2-1/2 to 3 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce
1 medium green pepper, chopped
1 medium tomato, chopped
1 medium cucumber, peeled and chopped
Directions
In a large skillet, brown beef; drain.
Add rice, onion, garlic, tomato juice, vinegar, salt, pepper and hot pepper sauce.
Stir.
Bring to a boil.
Reduce heat and cover tightly.
Simmer 20 minutes.
Remove from heat.
Stir green pepper, tomato and cucumber into cooked rice.
Cover and heat about 5 minutes.
Add rice, onion, garlic, tomato juice, vinegar, salt, pepper and hot pepper sauce.
