1 1/2 cups tomato juice
 
1 package (4 serving size) JELL O® Brand Lemon Flavor Sugar Free Gelatin
 
1 cup finely chopped tomato
 
1/2 cup finely chopped peeled cucumber
 
1/4 cup finely chopped green bell pepper
 
2 tablespoons finely chopped red bell pepper
 
2 tablespoons sliced green onions
 
2 tablespoons vinegar
 
1/4 teaspoon black pepper
 
1/8 teaspoon garlic powder

Directions

Bring tomato juice to a boil in small saucepan.
Completely dissolve gelatin in boiling tomato juice.
Chill until slightly thickened.
Combine remaining ingredients in medium bowl; mix well.
Stir into gelatin mixture.
Pour into individual dishes or medium serving bowl.
Chill until firm, about 3 hours.
