Gazpacho Cooler Recipe
Ingredients
| 1 small sweet green pepper, cored, seeded, and diced | ||
| 1 small sweet red pepper, cored,seeded, and diced | ||
| 1/2 medium-size cucumber, peeled, seeded, and diced | ||
| 1 green onion, including top, sliced | ||
| Lemon juice | 2 Tablespoon | |
| Garlic | 1 Clove (5gm) | |
| Red cayenne pepper | 1/8 Teaspoon | |
| 2 1/2 cups low-sodium tomato juice | ||
Directions
1 ln a food processor or blender, whirl the sweet green and red peppers, cucumber, green onion, lemon juice, garlic, and, if desired, the ground red pepper for 1 minute or until well combined.
Add the tomato juice and whirl 30 seconds more or until smooth.
