Ingredients

 
1 small sweet green pepper, cored, seeded, and diced
 
1 small sweet red pepper, cored,seeded, and diced
 
1/2 medium-size cucumber, peeled, seeded, and diced
 
1 green onion, including top, sliced
 
2 tablespoons lemon juice
 
1 clove garlic
 
1/8 teaspoon ground red pepper(cayenne),orto taste (optional)
 
2 1/2 cups low-sodium tomato juice

Directions

1 ln a food processor or blender, whirl the sweet green and red peppers, cucumber, green onion, lemon juice, garlic, and, if desired, the ground red pepper for 1 minute or until well combined.
Add the tomato juice and whirl 30 seconds more or until smooth.
