Gazpacho Recipe
Ingredients
| Garlic | 1 Clove (5gm) | |
| Onion | 1/2 Small, sliced | |
| Green pepper - 1 small, seeded and sliced | ||
| Ripe tomatoes | 3 | |
| Cucumber | 1 Large, peeled | |
| Ground black pepper | 1/4 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| Salt | 1 Teaspoon | |
| Olive oil | 2 Tablespoon | |
| Wine vinegar | 3 Tablespoon | |
| Chicken broth or ice water - 1/2 cup, chilled | ||
Directions
MAKING
1) In the container of electric blender add all ingredients and blend until coarsely done for about three seconds.
2) Transfer into a bowl and chill until serving time.
SERVING
3) Serve with toasted whole wheat croutons.
