Ingredients

 Garlic1 Clove (5gm)
 Onion1/2 Small, sliced
 Green pepper - 1 small, seeded and sliced
 Ripe tomatoes3
 Cucumber1 Large, peeled
 Ground black pepper1/4 Teaspoon
 Basil1/2 Teaspoon
 Salt1 Teaspoon
 Olive oil2 Tablespoon
 Wine vinegar3 Tablespoon
 Chicken broth or ice water - 1/2 cup, chilled

Directions

MAKING
1) In the container of electric blender add all ingredients and blend until coarsely done for about three seconds.
2) Transfer into a bowl and chill until serving time.

SERVING
3) Serve with toasted whole wheat croutons.
