Ingredients

 2 cups French bread cubes, soaked in 3 cups water
 Garlic4 Teaspoon, minced
 Onion1/2 Cup (16 tbs), minced
 4 tomatoes, peeled and diced
 3 tablespoons each olive oil and cider vinegar
 Salt1/2 Teaspoon
 Black pepper1/4 Teaspoon
 Tabasco sauce6 Drop
 Ground cumin1/8 Teaspoon
 Diced green tomato
 Coriander sprigs
  black pepper1

Directions

Puree ingredients, except diced tomato and coriander sprigs, and chill.
Adjust seasonings and serve in chilled bowls; garnish with a generous amount of green tomato and sprigs of coriander.
Pass the peppermill.
