Gazpacho With Chicken Stock Recipe

Ingredients
2 cups gelatinous chicken stock
3 cups water
3 tablespoons chicken stock base
1 large red onion, sliced
4 garlic cloves
1/4 to 1/2 cup minced bell pepper
3 large tomatoes, peeled,seeded and finely minced
2 tablespoons finely minced bell pepper
2 cucumbers, peeled, seeded and finely minced
1 clove garlic, finely minced
1/4 cup finely minced celery
2 tablespoons finely minced red onion
1-1/2 tablespoons fresh lemon or lime juice
3 tablespoons olive oil
2 or 3 drops Tabasco sauce and or 1/4 teaspoon ground cumin
Salt to taste
2 ripe avocados, cut in rings
2 cups herb croutons
Extra minced vegetables
Minced fresh chives and parsley
Directions
Bring stock, water, stock base, onion, whole garlic cloves and minced bell pepper to a boil, lower heat, cover and simmer gently for 10 minutes; cool, strain and chill.
Gently stir in tomatoes, finely minced bell pepper, cucumbers, minced garlic, celery, onion, lemon juice, olive oil and Tabasco.
Chill thoroughly and adjust seasonings with salt.
