Gazpacho Recipe

Ingredients

6 large tomatoes, seeded, peeled if desired, and coarsely chopped
4 scallions or 1 small onion, chopped
1/2 sweet red pepper, chopped
1 tablespoon olive oil
2 tablespoons tarragon vinegar
1/2 teaspoon oregano dash of cayenne pepper
1/2 cucumber, finely chopped
Parsley sprigs (garnish)

How to make Gazpacho

Place the tomatoes in a blender with the scallions, peppers, oil, vinegar, oregano, and cayenne.
Process on low to medium speed until the ingredients are finely chopped and well combined.
Divide the soup among four serving bowls.
Sprinkle each with cucumbers.
Garnish with parsley sprigs, if desired.
