Gaucho Beef Stew Recipe

| 4 pounds lean beef, cut in 1 1/2-inch cubes | ||

| Oil | 1/2 Cup (16 tbs) | |
| Garlic | 1 Clove (5gm), chopped | |
| Green pepper | 1 Cup (16 tbs), diced | |
| Celery | 2 Tablespoon, diced | |
| Scallions | 1/2 Cup (16 tbs), minced | |
| Carrot | 1/2 Cup (16 tbs), diced | |
| Apples | 2 , diced | |
| 1 cup sljerry | ||
| Red wine | 1 Cup (16 tbs) | |
| Onion | 1 Cup (16 tbs), diced | |
| 2 quarts brown gravy | ||
| Tomatoes | 1 pound, chopped | |
| Whole kernel corn | 1 Can (10oz) | |
| Water | 1 1/2 Cup (16 tbs) | |
| 2 potatoes, pared and quartered | ||
| 1 sweet potato, pared and quartered | ||
| Turnips | 1 Cup (16 tbs), diced | |
| 1/2 cup cooked, diced pumpkin | ||
| Green beans | 1/2 Cup (16 tbs) | |
| Peas | 1/2 Cup (16 tbs) | |
| Peaches | 1/2 Cup (16 tbs), sliced | |
| 1 grapefruit, sectioned | ||
| 2 oranges, sectioned | ||
| Toasted slivered almonds | 1/4 Cup (16 tbs) | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
Directions
Sprinkle meat with salt, pepper, and flour.
Brown in oil in deep kettle; add all remaining ingredients except the last five.
Simmer for 2 1/2 hours, stirring occasionally.
Turn into deep serving dish, top with fruits; sprinkle with nuts and parsley
