Gazpacho Recipe
Are you looking for an enticing Gaspacho recipe? I just love Appetizer recipes and this dish is my only favorite amongst them. The most important ingredient in Gaspacho is Vegetable. The Spanish Gaspacho has a way of addicting you to it on the first bite. In my estimation, if one calls oneself a good cook, one ought to have a personal recipe of Gaspacho, just like I do.
Ingredients
3 cups ripe tomatoes, peeled and chopped
1/2 cup onion, finely chopped
1 cucumber, diced, peeled and seeded
1/2 cup green pepper, finely chopped
1 small clove garlic, minced
3 tablespoons chopped parsley
2 tablespoons chopped chives
2 cups tomato juice
1/3 cup red wine vinegar
1/4 cup olive oil
Salt to taste
1/4 teaspoon cayenne pepper
Thin slices of cucumber for garnish
Directions
In a large bowl, combine the chopped tomatoes, chopped onion, cucumber, green pepper, minced garlic, chopped parsley and chives.
Add tomato juice, wine vinegar, olive oil, salt, cayenne; mix together.
Taste and correct seasoning.
Cover bowl and place in the refrigerator for at least two hours to chill and blend flavors.
