 Tomatoes6 Large
 Broccoli florets1/4 Cup (16 tbs), blanched
 Cauliflower florets1/4 Cup (16 tbs), blanched
 Spinach leaves1/4 Cup (16 tbs), shredded
 Mozzarella cheese1/4 Cup (16 tbs), grated
 Garlic1 Clove (5gm), chopped
 Olive oil2 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

Preheat oven to 350 °F (175 °C).
Slice off tops from tomatoes.
With a spoon, scoop out pulp, reserving around 1/4 cup (60 mL) pulp.
Mix reserved pulp with remaining ingredients.
Stuff tomatoes with mixture.
Cook in oven 20 minutes or so.
