Garnished Tomatoes Recipe
Ingredients
| Tomatoes | 6 Large | |
| Broccoli florets | 1/4 Cup (16 tbs), blanched | |
| Cauliflower florets | 1/4 Cup (16 tbs), blanched | |
| Spinach leaves | 1/4 Cup (16 tbs), shredded | |
| Mozzarella cheese | 1/4 Cup (16 tbs), grated | |
| Garlic | 1 Clove (5gm), chopped | |
| Olive oil | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Preheat oven to 350 °F (175 °C).
Slice off tops from tomatoes.
With a spoon, scoop out pulp, reserving around 1/4 cup (60 mL) pulp.
Mix reserved pulp with remaining ingredients.
Stuff tomatoes with mixture.
Cook in oven 20 minutes or so.
