Garlic Vegetable Soup Recipe
Garlic vegetable soup is a got cooked soup with vegetables that can be served as a starter or a flavorful snack. Cooked in a base of milk, the garlic vegetable soup contains oats, peas, carrots, corn, broccoli and asparagus.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Adapted from the Lantus book of recipes.
Ingredients
1 cup mixed vegetables (corn kernels, green peas, broccoli, carrots, asparagus), finely chopped
2 teaspoons finely chopped garlic
1/4 cup finely chopped onions
2 cups low fat milk
2 tablespoons quick cooking rolled oats
1 teaspoon Oil
Salt and pepper to taste
For the garnish
2 tablespoons chopped coriander
Directions
Heat oil in a non-stick pan, add onions and garlic, and saute till the onions are translucent.
Add vegetables and saute for a few minutes.
Add milk, salt and pepper.
Allow it to come to a boil and simmer till the vegetables are tender.
Add oats and simmer for another 5 minutes.
Serve hot garnished with chopped coriander.
