Be sure to make plenty of itÃ¢â‚¬â€for its taste, sharper than that of ordinary mayonnaise, is usually very popular.
Do be careful, however, to put in the full quantity of garlic.
Otherwise it is liable to be equally enthusiastically disliked.
Curiously enough, a lot of garlic is more objectionable than a very great deal of garlic indeed.
Soak the bread in cold milk, and squeeze thoroughly.
Pound it, or mash and beat it with the garlic until you have got a smooth paste.
Add salt and pepper, the yolks of egg and a little oil.When the paste is quite smooth, add the rest of the oil drop by drop as for a mayonnaise; and finally add the lemon juice, heated.
