Directions

● Preheat oven to 350. Combine garlic, parsley, olive oil, salt and pepper into a small bowl.

● Cut bread in half lengthwise and place on a baking sheet. Spread oil mixture evenly on both sides of the bread.

● Pop in oven for 10 minutes.

● Remove bread from oven. Put broiler on high.

● Sprinkle 1 tbsp. of cheese on each side of the bread and a pinch of cayenne pepper.

● Place back in oven under the broiler for 1-2 minutes to toast the bread. Watch very carefully cause it goes fast!

sometimes we wrap the sliced loaf with the garlic, etc. in tin foil and bake, doesn't dry out and the crust is crunchy but the bread is soft. Shanti/Mary-Anne

Oh ya ..this looks good. I dont what recipe for garlic bread i tried before, it came out all hard and crusty. I guess, i kept it too long ... I guess will have to try again, this time with the broiler trick :-).

It's awesome using 50/50 butter/olive oil, and always using Sourdough French crusty bread. Using roasted garlic mashed and mixed with butter and olive oil is yummy too and has a softer flavour. The parsley must be as she is using Flat Leaf Italian Parsley not the curly stuff. I like the cayenne pepper-must try that! Shanti/Mary-Anne
