Garlic With Fruit Recipe

3 to 5 garlic cloves, minced
1/3 cup slivered blanched almonds
3 slices white bread, crusts removed and diced
2-1/2 tablespoons olive oil
3-1/2 cups chicken or veal stock
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons dry white wine
1/2 cup cantaloupe, crenshaw or honeydew melon balls, chilled
1 bunch seedless white grapes, chilled
1/4 pound prosciutto ham, torn into strips
Lightly toasted slivered almonds
Directions
Puree garlic and almonds, combine with bread and saute in oil until golden.
Add stock, salt and pepper and cook 10 minutes.
Puree and cool.
Add wine, chill and adjust seasonings to taste.
Garnish with melon balls, grapes and ham and pass toasted almonds.
